Grilled Mustard-Herbed Pork Chops

Serves 4

Cook and Prep time: 35 minutes + 4 hours to marinate

Ingredients

  • 4 pork chops, boneless
  • 3 large lemons, freshly squeezed 
  • 1/4 cup stone ground mustard
  • 2 tbsp. parsley flakes 
  • 1 tbsp. coriander
  • 1 tsp ground caraway
  • 1/4 cup garlic-infused olive oil
  • salt and pepper to taste

Directions

  1. Combine lemon juice, stone ground mustard, coriander, parsley, caraway, olive oil, and salt and pepper.

  2. Pour the lemon/mustard marinade in a large resealable bag.

  3. Add the pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Refrigerate at least 4 hours, or overnight.

  4. Heat broiler or grill to high.

  5. Remove chops from marinade and lay approximately 6” from flame.

  6. Grill chops on each side for approximately 3 minutes, or until very slightly pink in the center. (cook time will vary depending on the thickness of chops)
